Basil Zucchini Cream Sauce
Soft zucchini, fresh basil and crème fraîche blended smooth in MyBlend Compact. The result is a light and creamy sauce with a gentle green flavour that never overwhelms. Lightly fry the zucchini first to bring out its flavour, then blend and toss with warm pasta.
Ingredients
- 160 ml zucchini, lightly sautéed
- 70 ml crème fraîche
- 40 ml fresh basil
- 40 ml grated parmesan
- 40 ml pasta water
- 1 tsp lemon juice
- Salt and black pepper
Instructions
- Sauté the zucchini for 2 to 3 minutes until lightly golden.
- Add zucchini and remaining ingredients to MyBlend Compact and blend until smooth.
- Toss with hot pasta and serve.
Tip: Do not overcook the zucchini. A light sauté of two to three minutes keeps it fresh and prevents the sauce from turning bitter.
